Chicken-water. This maybe prepared as follows: Take a small chicken, freed from the skin and fat between the muscles; and having divided it longitudinally, remove the lungs, liver, and every thing adhering to the hack and side-bones: cut the whole-bones and muscles -into very thin slices; put into a pan with a sufficient quantity of boiling water; cover the pan; and simmer with a slow fire for two hours. Put the pan upon the stove for half an hour, and strain through a sieve. Used where the lightest animal diet is indicated.
